Assessing the Potential of Old and Modern Serbian Wheat Genotypes: Yield Components and Nutritional Profiles in a Comprehensive Study

AB  - Creating wheat genotypes characterized by high grain yield, high protein content, and favorable amino acid composition is the main goal of breeders, especially in developing countries where wheat is a staple food. An experiment with 20 wheat genotypes, released through breeding activities in the Serbian region at different periods and adapted to its pedoclimatic conditions, was conducted with the aim of determining the genetic potential of the analyzed genotypes for grain yield and quality. Due to the divergence of the examined wheat germplasm, the factor of genotype had the largest share in the variation of all yield parameters (>66%). The genotypes Zadruga and Agrounija exhibited superior abilities for overall grain yield. Also, genotype Zadruga stood out in a distinct cluster group due to high values of both thousand grain weight and grain yield per plant. A continuous improvement in protein content was found, with newer genotypes having 17.13% higher protein content compared with older genotypes. Genotype Sloga stood out with the highest protein content (13.93%). On the other hand, the old genotype Balkan was distinguished by the highest content of nonessential amino acids (61.5 g 100 g−1 protein), which makes it a good genetic resource. Genotypes Agrounija (32.62 g 100 g−1 protein) and Tanjugovka (32.47 g 100 g−1 protein) had the highest content of essential amino acids. The highest AAS value was established for tryptophan (1.81) and the lowest for lysine (0.61). Genotypes Tanjugovka and Zadruga had the highest AAS, i.e., protein completeness. The genotypes Zadruga, Tanjugovka, Agrounija, and Sloga have demonstrated high-yield capacity and possess a favorable amino acid profile, making them promising candidates for enhancing the nutritional quality of wheat and potentially benefiting human health.

ined in two years over eight locations in Vojvodina The highest yield in both years had the hybrid
KWS2 (12 764 kg ha-1) Based on the AMMI1 model, hybrid KWS9 showed the highest stability
and adaptability at all locations According to AMMI2, hybrids KWS1, KWS3 and KWS12, had
the highest stability and adaptability, while hybrids KWS2, KWS6, KWS8, KWS9 and KWS10
showed a satisfactory level of stability and it is necessary to pay attention to which locations they
have positive interactions in order to be recommended in such regions Nevertheless, based on
the AMMI2, locations Temerin, Kikinda and Zrenjanin, showed similar interaction response,
which points out that the number of trial locations could be reduced Obtained results would
contribute to the more precise decision in hybrids recommendation for the certain region, but
also in defining further aims in maize breeding.
AB  - Identifikacija visoko prinosnih i stabilnih genotipova jedan je od vodećih ciljeva u svim ople-
menjivačkim programima Pravilna procena hibrida je često veoma otežana usled prisustva in-
terakcije genotip/spoljašnja sredina Jedan od načina da se eliminišu negativne posledice interak-
cije je da se primenom pouzdanih statističkih modela, kao što je AMMI model, izdvoje stabilni,
visoko prinosni genotipovi, koji pozitivo reaguju na poboljšanje uslova u kojima se gaje Cilj
ovog rada bio je da se metodom AMMI analize pronađu i utvrde specifične interakcije hibrida
kukuruza u različitim sredinama u dve godine istraživanja Odabrano je 12 KWS hibrida kuku-
ruza FAO 400-500, koji su ispitivani u dve godine na šest lokaliteta u Vojvodini Najveći prinos u
obe godine ispitivanja imao je hibrid KWS2 (12 764 kg ha-1) Na osnovu AMMI1 modela hibrid
KWS9 je pokazao najveću stabilnost i adaptabilnost na svim lokacijama Analizom AMMI2 bi-
plota utvrđeno je da hibridi KWS1, KWS3 i KWS12 pokazuju najveću stabilnost i adaptabilnost,
dok hibridi KWS2, KWS6, KWS8, KWS9 i KWS10 pokazuju zadovoljavajući nivo stabilnosti i
potrebno je obratiti pažnju sa kojim lokacijama ostvaruju pozitivne interakcije i u tim regionima
ih preporučivati Takođe na osnovu AMMI2 biplota, lokacije Temerin, Kikinda i Zrenjanin su
pokazale vrlo sličan interakcijski odgovor, što ukazuje na mogućnost smanjenja broja lokacija za
izvođenje ogleda Rezultati dobijeni ovim istraživanjem će doprineti preciznijem i kvalitetnijem
odlučivanju prilikom izbora hibrida koji će se gajiti u određenom regionu, ali i definisanju daljih
pravaca u oplemenjivanju kukuruza.

AB  - The investigation of three wheat varieties (PKB Talas, BG Merkur and PKB Lepoklasa) carried out at experimental field and laboratory of Institute PKB Agroekonomik, during two years 2009 and 2010. Correlations between morphological and production traits of plants number of shoots, number of spikelets per spike, number of grains per spike, 1000 grain weight and grain weight per spike, were studied. Correlations were observed separately for three Institute PKB Agroekonomik varieties. The manner of preparing data for calculating correlations influences obtained correlation values, and these values can differ substantially. Correlations calculated based on aggregated data are higher than those based on all data. Correlations differ for different varieties, which is logical, because each variety has a different genotype and specific genes forming various interactions. Taking into account all three varieties, high and positive correlations were found between: number of grains per spike and grain weight per spike (>0.78), number of spikelets per spike and number of grains per spike (>0.79), and number of spikelets per spike and grain weight per spike (>0.73).

Presence of deoxynivalenol in wheat milling products in Serbia during 2016-2017

AB  - Deoxynivalenol (DON) is one of several mycotoxins produced by certain Fusarium species that frequently infect wheat, corn, rice, oats, barley and other grains in the field or during storage. DON affects animal and human health causing vomiting, acute temporary nausea, diarrhea, abdominal pain, headache, dizziness and fever. The objective of this study was to evaluate the natural occurrence of deoxynivalenol (DON) in white wheat flour, whole wheat flour and wheat bran. In this study, a total of 75 white wheat flour, whole wheat flour and wheat bran samples were collected in the period of 2016-2017. All samples were analyzed for DON by enzyme-linked immunosorbent assay. DON was detected in 23 out of 45 white wheat flour samples (51.11%), at levels ranging from 99 µg/kg to 440 µg/kg. Out of 15 whole wheat flour samples, 14 were contaminated by DON (93.33%), at levels ranging from 98 µg/kg to 479 µg/kg. The maximum contamination level of DON (2,790 µg/kg) in this study was found in wheat bran. Presence of DON was detected in all 15 samples of wheat bran (100%). These results suggest a high percentage of contaminated samples, especially among wheat bran samples, which raises a risk for consumers of wheat bran and the need to monitor final products before consumption.
AB  - Deoksinivalenol (DON) jedan je od nekoliko mikotoksina koje produkuju određene vrste roda Fusarium, koje često kontaminiraju pšenicu, kukuruz, pirinač, ovas, ječam i ostale žitarice, kako u polju, tako i tokom perioda skladištenja. DON utiče na zdravlje ljudi i životinja izazivajući povraćanje, akutne mučnine, dijareju, abdominalni bol, glavobolje, vrtoglavice i groznicu. Cilj ovog istraživanja bio je da se ispita i proceni prirodna pojava deoksini­valenola (DON) u belom pšeničnom brašnu, integralnom pšeničnom brašnu i pšeničnim mekinjama. Ukupno 75 uzoraka belog pšeničnog brašna, integralnog pšeničnog brašna i pšeničnih mekinja uzorkovano je u periodu 2016-2017. Svi uzorci su analizirani na prisustvo DON-a imunoenzimskim ELISA testovima. Prisustvo DON-a je detektovano u 23 od 45 uzoraka belog pšeničnog brašna (51,11%), u koncentracionom opsegu od 99 do 440 µg/kg. Od 15 ispitanih uzoraka integralnog pšeničnog brašna 14 je bilo kontaminirano (93,33%), a koncentracija DON-a kretala se u opsegu od 98 do 479 µg/kg. Maksimalna koncentracija DON-a (2.790 μg/kg) u ovom istraživanju zabeležena je kod pšeničnih mekinja. Prisustvo DON-a detektovano je u svih 15 ispitivanih uzorka pšeničnih mekinja (100%). Ovi rezultati ukazuju na visok procenat kontaminiranih uzoraka, pogotovo kod uzoraka pšeničnih mekinja, što predstavlja rizik po potrošače i iziskuje potrebu za monitoringom finalnih proizvoda pre puštanja u promet.

All samples were analyzed for DON by enzyme-linked immunosorbent assay. DON was detected in 23 out of 45 white wheat flour samples (51.11%), at levels ranging from 99 µg/kg to 440 µg/kg. Out of 15 whole wheat flour samples, 14 were contaminated by DON (93.33%), at levels ranging from 98 µg/kg to 479 µg/kg. The maximum contamination level of DON (2,790 µg/kg) in this study was found in wheat bran. Presence of DON was detected in all 15 samples of wheat bran (100%). These results suggest a high percentage of contaminated samples, especially among wheat bran samples, which raises a risk for consumers of wheat bran and the need to monitor final products before consumption., Deoksinivalenol (DON) jedan je od nekoliko mikotoksina koje produkuju određene vrste roda Fusarium, koje često kontaminiraju pšenicu, kukuruz, pirinač, ovas, ječam i ostale žitarice, kako u polju, tako i tokom perioda skladištenja. DON utiče na zdravlje ljudi i životinja izazivajući povraćanje, akutne mučnine, dijareju, abdominalni bol, glavobolje, vrtoglavice i groznicu. Cilj ovog istraživanja bio je da se ispita i proceni prirodna pojava deoksini­valenola (DON) u belom pšeničnom brašnu, integralnom pšeničnom brašnu i pšeničnim mekinjama. Ukupno 75 uzoraka belog pšeničnog brašna, integralnog pšeničnog brašna i pšeničnih mekinja uzorkovano je u periodu 2016-2017. Svi uzorci su analizirani na prisustvo DON-a imunoenzimskim ELISA testovima. Prisustvo DON-a je detektovano u 23 od 45 uzoraka belog pšeničnog brašna (51,11%), u koncentracionom opsegu od 99 do 440 µg/kg. Od 15 ispitanih uzoraka integralnog pšeničnog brašna 14 je bilo kontaminirano (93,33%), a koncentracija DON-a kretala se u opsegu od 98 do 479 µg/kg. Maksimalna koncentracija DON-a (2.790 μg/kg) u ovom istraživanju zabeležena je kod pšeničnih mekinja. Prisustvo DON-a detektovano je u svih 15 ispitivanih uzorka pšeničnih mekinja (100%). Ovi rezultati ukazuju na visok procenat kontaminiranih uzoraka, pogotovo kod uzoraka pšeničnih mekinja, što predstavlja rizik po potrošače i iziskuje potrebu za monitoringom finalnih proizvoda pre puštanja u promet.",

AB  - The primary aim of this research was to investigate the effect of dilute alkaline steeping on molds and toxicity of maize malt. Samples of maize were collected from one farm located in the Serbian autonomous region Vojvodina. Steeping regimes were performed by using 0.1, 0.2, and 0.3% NaOH solutions. The effects of these solutions on mold contamination, total aflatoxin (AFLA), deoxynivalenol (DON), zearalenone (ZON), rootlet length, moisture, total nitrogen, content of protein, fat content, ash content, content of total carbohydrates, and energy value of maize malt were evaluated. Steeping in 0.1, 0.2, and 0.3% NaOH reduced the levels of molds from 10(6) to 10(4) CFU/g, and steeping in 0.3% NaOH eliminated some of the mold genera. Also, it significantly reduced (P  lt  0.05) the level of total AFLA, DON, and ZON. However, steeping in (control) water also significantly reduced (P  lt  0.05) the level of DON and ZON. Malting also significantly reduced (P  lt  0.05) total nitrogen and therefore content of proteins. However, steeping in 0.1, 0.2, and 0.3% NaOH caused significantly smaller reductions (P  lt  0.05). Significant reduction (P  lt  0.05) was also observed in the rootlet length, content of fat, and ash content. Steeping in 0.3% NaOH is proposed as a method for the reduction of mold and AFLA, DON, and ZON contamination during maize malting. Energy value of maize increases in the malting process regardless of the steeping regime.

Utilization of Mixolab for assessment of durum wheat quality dependent on climatic factors

AB  - For durum wheat quality assessment the commonly used parameters are protein content, yellow pigment content, hectoliter mass, grain vitreousness, 1000-grain weight and sodium dodecyl sulphate sedimentation. For wheat processing quality, in this study the Mixolab, instrument of a newer generation was used. Mixolab has been largely used for a rapid assessment of the Triticum aestivum quality but there is no a lot of data about durum wheat quality assesment. Therefore, the aim of this work was to test its potential in the quality characterization of fourteen durum wheat breeding lines grown during two production years with different climate conditions. The obtained results showed significant differences in starch-amylase complex part of Mixolab curve between two studied years. Mixolab parameters C3, C4 and C5 were in line with Falling Number values and amylolytic activity of samples. Samples from 2013 production year with higher precipitation sum had lower values of C3, C4 and C5 parameters as well as Falling Number values and higher amylolytic activity. On contrary, protein part of Mixolab curves expressed differences in dependence of genotype. In comparison to the standard parameters of protein and starch quality of durum wheat, Mixolab provides more complete information in a shorter time frame.
