AB  - The aim of this study was to assess the chemical composition and bioactive properties of the wholegrain flour obtained from eleven maize inbred lines to identify genotypes with increased potential for the development of hybrids with high nutritional and functional value, suitable for food production. The maize inbreds, including seven standard yellow, two QPM (quality protein maize) and two lines for red kernel hybrids, were grown in the experimental field of the Maize Research Institute at the location of Zemun Polje, Serbia. Wholegrain maize flour was got by grinding the maize grain in a laboratory mill. The assessment of the chemical composition and content of certain bioactive compounds, as well as the total antioxidant capacity, was conducted using standard laboratory procedures. The highest starch content (73.73%) was determined in line L8, while line L10 had the highest protein content (12.82%). Among soluble proteins, the α-zein fraction was dominant in most of the lines, ranging from 0.92% to 3.57%. The highest content of total fibres (NDF) was determined in red kernel line L9 (15.77%). Line L8 was the richest in total carotenoids (21.08 μg βCE/g d.m.), while line L7 had the highest total antioxidant capacity (34.30 mmol Trolox/kg d.m.), which can be explained by the presence of anthocyanins in the red grain. Line L1 had the highest content of total sugars (3.36%), and line L4 had the lowest (1.44%). Most of the samples of inbred lines investigated in this study showed good quality parameters regarding chemical composition and bioactive properties. The obtained results may provide some valuable guidelines needed in the following stages of maize breeding and open up various possibilities for the utilization of wholegrain maize flour in the food industry.
AB  - Cilj ovog istraživanja bio je da se odrede hemijski sastav i bioaktivna svojstva integralnog brašna dobijenog od jedanaest inbred linija kukuruza u cilju identifikacije genotipova sa povećanim potencijalom za razvoj hibrida visoke nutritivne i funkcionalne vrednosti, pogodnih za proizvodnju hrane. Linije kukuruza, uključujući sedam standardnih žutih, dve QPM i dve linije za hibrid crvenog zrna, gajene su na oglednom polju Instituta za kukuruz na lokaciji Zemun Polje, Srbija. Integralno kukuruzno brašno dobijeno je mlevenjem u laboratorijskom mlinu. Procena hemijskog sastava i sadržaja pojedinih bioaktivnih jedinjenja, kao i ukupnog antioksidativnog kapaciteta, sprovedena je primenom standardnih laboratorijskih procedura. Najviši sadržaj skroba (73,73%) utvrđen je u liniji L8, dok je linija L10 imala najveći sadržaj proteina (12,82%). Svi uzorci novih inbred linija ispitivani u ovoj studiji pokazali su dobre parametre kvaliteta u pogledu hemijskog sastava i bioaktivnih svojstava. Dobijeni rezultati mogu dati neke dragocene smernice potrebne u narednim fazama oplemenjivanja kukuruza, kao i otvoriti različite mogućnosti za korišćenje integralnog kukuruznog brašna u prehrambenoj industriji.

Chilling induced stress sRNAs in maize plants in early stages of development.

AB  - Small non-coding RNAs (sRNAs) have an important role in regulating plant gene expression,
both in developmental processes and stress responses, through RNA interference or silencing.
sRNAs respond to environmental stressors in manners dependant on the type of stress, tissue
and genetic background. Herein, their role in chilling stress response is examined in young maize
seedlings (Zea mays L.) of two inbred lines of contrasting chilling tolerance, using high-throughput
sequencing methods. Understanding this response is critical since one of the most promising
strategies of avoiding maize yield loss due to climate change is earlier sowing, during periods
of suboptimal temperatures. Sterilized seeds of the two lines, marked as LT (tolerant), and LS
(sensitive), were germinated in the dark for five days (optimal conditions), after which the 5-d
old seedlings were exposed to chilling conditions for 24h (temperature: 10/8 °C; photoperiod:
12/12h). Samples for RNA isolation were taken after 6h and 24h of treatment. After the cDNA
library preparations were finished, single-end 50 bp sequencing was performed (Illumina® Novaseq 6000). sRNAseq analysis was performed using a custom pipeline that included quality control, mapping, known miRNA alignment and novel miRNA prediction and quantification. This is an ongoing research and a selection of results will be presented. On average 81% of sRNA reads were succesfully mapped and belong to the class of microRNAs (miRNAs). Some of the sRNAs appear to be differentialy regulated depending on the genotype and the chilling conditions, but more research is needed to verify their potential role in this process.

AB  - Circular RNAs (circRNAs) are endogenous, single-stranded, covalently closed RNA molecules, generated by back-splicing events. Their role as regulators of different processes in animal cells has been widely studied and proven, however functional studies on circRNAs in plants are still few and far between. Here we attempt to bring light to their role in abiotic stress response – particularly chilling stress, in young maize seedlings (Zea mays L.) using high-throughput sequencing methods. One of the strategies of avoiding yield loss is earlier maize sowing as to escape exposure to extremely high temperatures and drought in the summer. This means submitting maize plants to suboptimal temperatures during earlier developmental stages.
Two maize inbred lines of contrasting tolerance to chilling were selected and marked as LT (tolerant), and LS (sensitive). Sterilized seeds of the two lines were germinated for five days, in the dark, in optimal conditions and after the germination period was finished, the 5-d old seedlings were exposed to chilling conditions for 24h (temperature: 10/8° C; photoperiod: 12/12h). Sampling was done after 6h and 24h of treatment. After total RNA isolation and purification, quality check, and cDNA library preparations were finished, paired-end 150 sequencing was performed (Illumina® Novaseq 6000). Custom pipeline was used for circRNAseq data analysis and included their identification and quantification (CIRCexplorer2, v2.0.5), differential expression analysis (edgeR Bioconductor v4.1) and functional enrichment (GO, KEGG, psRobot). 
Processing of this data is still underway, and by now several thousand circRNA molecules and over a thousand 5' and 3' alternative back-splicing sites have been identified. Significant number of those circRNA have shown expression dependent on chilling, as well as genotype, but further studies are necessary to confirm their role in this process, find their target molecules and unravel regulatory networks they create with other types of RNAs.

Reciprocal effect on grain yield and yield components in single-cross maize hybrids

AB  - Reciprocal effect in maize refers to the phenotypic difference between reciprocal F1 hybrids.
The aim of this study was to estimate influence of reciprocal crosses on grain yield and eight
yield components. Five single-cross hybrids, their reciprocal crosses and six parental inbred
lines were selected and all hybrids belong to late maturity group (FAO 500-600) with Lancaster
ZPL-7 line as mutual parent. The experiment was set up in two replications using a completelyrandomized block design in 2016 and 2017, at a total of seven environments. Reciprocal effect
significantly influenced only grain yield and ear length, while factors hybrid and location were
significant for all the examined traits. All hybrids individually displayed significant reciprocal
effect for grain yield, ear length, number of kernels per row and 100 kernel weight, two hybrids
for kernel length and thickness, while three hybrids showed reciprocal effect on kernel width.
The effects were both positive and negative depending on the genotype itself. Furthermore,
there were no significant differences for ear row number and ear width between normal and
reciprocal variants. The highest difference for grain yield was between ZP 606 reciprocal
(12.06 t/ha) and ZP 606 normal (11.28 t/ha). Pearson correlations were calculated between
examined traits. All correlations between grain yield and other yield components were found
significant and positive, except for the number of rows per ear (no correlation) and kernel width
(negative correlation). Reciprocal effect has strong influence on the measured yield traits, but
it is genotype specific. Therefore, in the future we should examine normal and reciprocal
variants of all commercial maize hybrids.

abstract = "Reciprocal effect in maize refers to the phenotypic difference between reciprocal F1 hybrids.
The aim of this study was to estimate influence of reciprocal crosses on grain yield and eight
yield components. Five single-cross hybrids, their reciprocal crosses and six parental inbred
lines were selected and all hybrids belong to late maturity group (FAO 500-600) with Lancaster
ZPL-7 line as mutual parent. The experiment was set up in two replications using a completelyrandomized block design in 2016 and 2017, at a total of seven environments. Reciprocal effect
significantly influenced only grain yield and ear length, while factors hybrid and location were
significant for all the examined traits. All hybrids individually displayed significant reciprocal
effect for grain yield, ear length, number of kernels per row and 100 kernel weight, two hybrids
for kernel length and thickness, while three hybrids showed reciprocal effect on kernel width.
The effects were both positive and negative depending on the genotype itself. Furthermore,
there were no significant differences for ear row number and ear width between normal and
reciprocal variants. The highest difference for grain yield was between ZP 606 reciprocal
(12.06 t/ha) and ZP 606 normal (11.28 t/ha). Pearson correlations were calculated between
examined traits. All correlations between grain yield and other yield components were found
significant and positive, except for the number of rows per ear (no correlation) and kernel width
(negative correlation). Reciprocal effect has strong influence on the measured yield traits, but
it is genotype specific. Therefore, in the future we should examine normal and reciprocal
variants of all commercial maize hybrids.",

Nutritional and cost effects of adapted quality protein maize on broiler feeding

AB  - ZPQPM13 is a maize hybrid with improved protein quality, adapted to temperate climate growth conditions, developed by crossing a QPM version of ZPL5 commercial line (developed by marker assisted selection) and GS-6 (a QPM line with 50% tropical and 50% temperate germplasm). This hybrid has grain yield as commercial hybrids, over 90% of hard endosperm, contents of tryptophan and protein over 0.075% and 10%, respectively, and stability of tryptophan content over different locations and years. ZPQPM13 was tested for use in broiler feeds, with the aim to reduce utilization of costly synthetic lysine or soybean components. The feeding experiment on Ross 308 broilers was divided into two groups – control (fed with standard maize) and treatment (fed with QPM). In treatment group diets, ZPQPM13 was increased and soybean component decreased for 3%. Chemical analyses revealed higher contents of limiting essential amino acids in mercantile ZPQPM13 compared to standard maize – 0.44 vs. 0.25 % lysine, 0.077 vs. 0.070 % tryptophan and 0.39 vs. 0.27 % threonine. Duration of each feeding trial was 42 days, comprising three phases - starter (1-14 days), grower (15-35 days) and finisher (36-42 days). Feed intake (FI), body mass gain (BMG), average daily gain (ADG) and feed conversion ratio (FCR) were calculated at the end of each phase. In treatment group, FI was reduced, while BMG and ADG were higher in starter phase but lower in grower and finisher phases. FCR was lower in all three phases in treatment group – 1.13 vs. 1.30, 1.25 vs. 1.33 and 1.28 vs. 1.45. Although a small drawback is that final weight was 3.4 % higher in control broilers, comparison of feed and meat prices show that financial benefits of using QPM are still significant compared to using standard maize in feeds, as soybean is four times more expensive than maize.

AB  - The present study was carried out to demonstrate the combined effects of different maize flour, ascorbic acid and sugar on the physical, textural and sensory properties of composite breads. The composite flour was prepared using 70% of wheat flour and 30% of flour obtained from grain of differently colored maize-light blue, blue, red and yellow maize flour. Chemical characterization of composite flours made with four different types of maize was also assessed. Furthermore, the content of total phenolics, flavonoids, anthocyanins, phenolic acids and antioxidant capacity in composite flours was determined. A total of 12 breads were prepared, four of which were control composite breads, four breads with ascorbic acid, and four were breads with ascorbic acid and sugar. The content of total phenolic compounds showed clear differences among all composite flours. The anthocyanins content determined in composite flours was in the following descending order: blue>red>light blue, while in the yellow maize composite flour anthocyanins were not detected. The results showed that the addition of AsA (0.025%) and sugar (5%) negatively affected the volume as well as the specific volume of composite wheat-maize breads. The texture analysis showed that the addition of AsA in the amount of 0.025% had no impact on springiness, cohesiveness and resilience of bread crumb, while it increased crumb hardness. However, composite breads made with AsA and AsA/sugar showed a more compact structure, with a larger number of cells and smaller mean cell areas. AsA/sugar bread samples within the tested doses had the lowest springiness, which is indicative of brittleness and reflects the tendency of the bread to crumble when slicing. Results of the sensory evaluation revealed that the AsA and sugar addition had a generally positive effect on the investigated sensory attributes.
AB  - U ovom radu, ispitivan je zajednički uticaj brašna kukuruza različite boje zrna,
askorbinske kiseline i šećera na fizička, teksturna i senzorna svojstva mešanog pšenično-
kukuruznog hleba. Smeša brašna je pripremljena od 70% pšeničnog brašna i 30% brašna
dobijenog od različito obojenog kukuruznog zrna – svetloplavog, plavog, crvenog i žutog.
Izvršena je i hemijska karakterizacija pšenično-kukuruznih smeša brašna. U pšenično-
kukuruznim smešama brašna određen je sadržaj ukupnih fenola, flavonoida, antocijana,
fenolnih kiselina i antioksidativni kapacitet. Ukupno je pripremljeno 12 hlebova, od kojih
su četiri bila kontrolna, četiri sa askorbinskom kiselinom i četiri hleba sa askorbinskom
kiselinom i šećerom. Sadržaj ukupnih fenolnih jedinjenja pokazao je jasne razlike između
svih pšenično-kukuruznih smeša brašna. Sadržaj antocijana je u smešama pšenično-
kukuruznog brašna imao sledeći opadajući redosled: smeša sa plavim
kukuruzom>crvenim kukuruzom>svetlo plavim kukuruzom, dok u smeši pšeničnog
brašna i brašna žutog kukuruza antocijani nisu detektovani. Rezultati su pokazali da je
dodatak askorbinske kiseline (0,025%) i šećera (5%) negativno uticao na zapreminu kao i
na specifičnu zapreminu mešanih pšenično-kukuruznih hlebova. Analiza teksture je
pokazala da dodatak askorbinske kiseline u količini od 0,025% nije uticao na elastičnost,
kohezivnost i elastičnost sredine hleba, ali je povećao tvrdoću sredine. Međutim, mešani
pšenično-kukuruzni hlebovi sa dodatkom askorbinske kiseline i askorbinske kiseline i
šećera, su pokazali kompaktniju strukturu sa većim brojem pora. Uzorci hleba sa
askorbinskom kiselinom i šećerom u ispitivanim dozama imali su najmanju elastičnost,
što ukazuje na krtost i odražava se na mrvljenje hleba prilikom sečenja. Rezultati
senzorne analize pokazali su da je dodatak askorbinske kiseline i šećera generalno imao
pozitivan uticaj na ispitivana senzorna svojstva.

AsA/sugar bread samples within the tested doses had the lowest springiness, which is indicative of brittleness and reflects the tendency of the bread to crumble when slicing. Results of the sensory evaluation revealed that the AsA and sugar addition had a generally positive effect on the investigated sensory attributes., U ovom radu, ispitivan je zajednički uticaj brašna kukuruza različite boje zrna,
askorbinske kiseline i šećera na fizička, teksturna i senzorna svojstva mešanog pšenično-
kukuruznog hleba. Smeša brašna je pripremljena od 70% pšeničnog brašna i 30% brašna
dobijenog od različito obojenog kukuruznog zrna – svetloplavog, plavog, crvenog i žutog.
Izvršena je i hemijska karakterizacija pšenično-kukuruznih smeša brašna. U pšenično-
kukuruznim smešama brašna određen je sadržaj ukupnih fenola, flavonoida, antocijana,
fenolnih kiselina i antioksidativni kapacitet. Ukupno je pripremljeno 12 hlebova, od kojih
su četiri bila kontrolna, četiri sa askorbinskom kiselinom i četiri hleba sa askorbinskom
kiselinom i šećerom. Sadržaj ukupnih fenolnih jedinjenja pokazao je jasne razlike između
svih pšenično-kukuruznih smeša brašna. Sadržaj antocijana je u smešama pšenično-
kukuruznog brašna imao sledeći opadajući redosled: smeša sa plavim
kukuruzom>crvenim kukuruzom>svetlo plavim kukuruzom, dok u smeši pšeničnog
brašna i brašna žutog kukuruza antocijani nisu detektovani. Rezultati su pokazali da je
dodatak askorbinske kiseline (0,025%) i šećera (5%) negativno uticao na zapreminu kao i
na specifičnu zapreminu mešanih pšenično-kukuruznih hlebova. Analiza teksture je
pokazala da dodatak askorbinske kiseline u količini od 0,025% nije uticao na elastičnost,
kohezivnost i elastičnost sredine hleba, ali je povećao tvrdoću sredine. Međutim, mešani
pšenično-kukuruzni hlebovi sa dodatkom askorbinske kiseline i askorbinske kiseline i
šećera, su pokazali kompaktniju strukturu sa većim brojem pora. Uzorci hleba sa
askorbinskom kiselinom i šećerom u ispitivanim dozama imali su najmanju elastičnost,
što ukazuje na krtost i odražava se na mrvljenje hleba prilikom sečenja. Rezultati
senzorne analize pokazali su da je dodatak askorbinske kiseline i šećera generalno imao
pozitivan uticaj na ispitivana senzorna svojstva.",

uzorci cele biljke i zrna hibrida ZP 548 i ZP 655b i uzorci džibre dobijeni od hibrida ZP 548 i ZP 548c (hibrid crvenog zrna). Uzorci
kukuruzne džibre, sporednog produkta iz proizvodnje bioetanola, dobijeni su postupkom odvojene dvostepene hidrolize i fermentacije

AB  - Improving yield potential, crop quality and abiotic stress tolerance have always been some of the most important requirements for successful crop production. Poor environmental conditions arising as repercussions of climate change, like the drastically higher temperatures and drought during the summer, have become a significant cause of productivity and yield loss. Therefore, many strategies are focused on minimizing their negative effects, like changing the cropping patterns, including earlier sowing (early spring). Maize is especially sensitive to extreme heat occurring during the flowering and grain filling stages in summer, and earlier sowing enables avoiding this. However, it also means exposure to suboptimal temperatures and chilling stress during earlier developmental stages, leading to a demand for the development of maize lines tolerant to low temperatures during those stages.
In this study, 46 maize lines used in breeding programmes were grouped as Lancaster and group consisting of different heterotic groups like BSSS, Iowa dent, etc. and further studied by whole transcriptome sequencing (maize leaves, V4 stage, optimal temperature conditions). Gene expression analyses revealed a set of 77 differentially expressed genes (DEGs) between the two groups, out of which 20 were annotated as related to abiotic stress response. ATP synthase CF0 A subunit gene (atpI) was chosen for further characterization under low temperature conditions in two inbred lines (L1, L2) with most contrasting FPKM values, one belonging to each group. The experiment was performed with 5-day old and V4 maize seedlings, under optimal (25°/20°C) and low (8°/10°C) temperature conditions, with a 12h photoperiod. Samples for RNA extraction, cDNA synthesis and qPCR expression analysis were taken after 6h and 24h exposure to experimental temperatures. 
The results showed different expression regulation of atpI dependent on cold exposure duration, developmental stage and genetic background. atpI expression was up-regulated in both genotypes in V4 stage, with the expression peak after 6h of treatment. In the 5-day old seedling stage, atpI expression depended on the genotype – it was down-regulated in L1, and up-regulated in L2. The expression in both genotypes in this developmental stage was at its highest after 24h of treatment. This suggests that mechanisms involved in ATP synthesis and photosynthetic phosphorylation are differentially regulated based on low temperature exposure duration, developmental stage and genetic background.

AB  - Earlier sowing is one of the most important strategies of ensuring good yield potential and crop quality under poor environmental conditions arising as consequences of climate changes. Sowing maize in early spring, when the temperatures are lower, enables avoidance of drought and high summer temperatures during the flowering and grain filling stages, but it also means that maize plants will be exposed to suboptimal temperatures during earlier developmental stages. Consequently, development of maize lines tolerant to low temperatures during those stages becomes precedence. 
An initial study encompassed whole transcriptome sequencing of 46 maize inbred lines at V4 stage grown under optimal temperature conditions. Gene expression analysis of maize genotypes grouped as Lancaster and non-Lancaster (BSSS, Iowa dent, etc.) revealed a set of 77 differentially expressed genes (DEGs). Seven of these genes, related to abiotic stress response, were further characterized under low temperature conditions in eight inbred lines at V4 stage. Their expression showed specific profiles depending on the duration of low temperature exposure and genetic background. To test if these genes follow the same expression patterns in earlier developmental stages, the experiment was performed with 5-day old maize seedlings of two inbred lines (tolerant and sensitive), under optimal (25°/20°C) and low (8°/10°C) temperature conditions, with a 12h photoperiod. Samples for RNA extraction, cDNA synthesis and qPCR expression analysis were taken after 6h and 24h exposure to experimental temperatures. Five analyzed genes showed different expression regulation dependent on cold exposure duration. Two genes showed regulation dependent both on cold exposure duration and genetic background. Additionally, three of five DEGs showed different expression patterns at 5-day old seedling stage than at V4 stage. The results imply that processes underlying maize low temperature response are differentially regulated based on stress exposure duration, developmental stage and genetic background.

AB  - One of the strategies for overcoming global climate change threatening to decrease maize yield is early sowing. To contribute to the development of cold-tolerant hybrids this research focused on the genetic background's comparative analysis in maize inbreds with good combining ability. Leaf whole-transcriptome sequencing of 46 maize genotypes revealed 77 differentially expressed genes (DEGs) between Lancaster and other heterotic groups (i.e. BSSS, Iowa dent, Ohio), referred to as non-Lancaster group, under optimal growing conditions. Cold test of the subset of four Lancaster and four non-Lancaster lines showed that the former were cold sensitive and the latter cold tolerant. Cold-induced expression analysis of seven DEGs in eight lines revealed different expression regulation dependent on the duration of cold exposure and genetic background for six out of seven analysed genes—chloroplast ATP-sulphurylase, photosystem II cytochrome b559 alpha subunit, CIPK serine-threonine protein kinase 15, glutamyl-tRNA reductase, photosystem II reaction centre protein I and Calvin cycle CP12-chloroplastic-like encoding genes. The results imply that differently regulated basic processes between Lancaster and non-Lancaster maize group involve, at least, photosynthesis and sulphate assimilation, contributing to their different cold response and different adaptation to low temperatures.

Adapted quality protein maize for broiler feeds

AB  - Maize has low nutritional quality due to poor content of essential amino
acids lysine and tryptophan in the dominant seed storage protein fraction,
zeins. However, Quality Protein Maize (QPM), a variety of opaque2 maize
but with good agronomic traits, can have 60% to 100% higher content of
lysine than standard maize. Monogastric animals (pigs, poultry, fish), like
humans, cannot synthesize lysine and tryptophan de novo and thus these
amino acids must be supplied through diets. QPM was primarily developed
for human consumption to overcome malnutrition in countries where maize
is staple food. Thus, QPM is of tropical origin and its adaptation to temperate
regions is frequently hampered by the retained exotic germplasm.
Development of adapted QPM hybrids is mainly aimed for feed industry. It
has been shown that substituting standard maize with QPM in feed diets
could be profitable due to improved weight gain, feed conversion ratio and
decreasing of dietary lysine supplementation. Maize Research Institute,
Zemun Polje has a program on converting elite inbred lines through marker
assisted breeding into their QPM counterparts and developing commercial
QPM hybrids. Up to now, two inbred lines have been converted, while eight
lines have passed through three or four generations of backcrossing and one
generation of selfing. Tryptophan content in the converted selfed plants was
in the range from 0.080 to 0.093. Besides developing QPM counterparts of
commercial hybrids, one QPM hybrid obtained by crossing a converted elite
inbred line and an adapted tropical inbred line was developed and tested over
different locations and in different years. This hybrid is currently used in
feeding experiments with the objective to test effects of replacing standard
maize with QPM in diets on broiler performances.

hard endosperm fraction content varied between 57.66±0.93% (ZP 4007) and 67.08±0.42% (ZP
366 red). Regarding chemical composition, starch was predominant constituent ranging from
66.80±0.18 (ZP 4007 red) to 72.96±0.37 (ZP 606). The highest protein content was detected in
ZP 606 (10.72±0.11) and the lowest in ZP 7007 red hybrid (8.63±0.04%). Milling response was
highly influenced by hard endosperm fraction content (0.81**), and starch content was strongly
correlated to 1000-kernel weight (0.77**). Whole-grain maize flours produced from yellow and
red kernels without removing the germ are naturally gluten-free and can be used as functional
food ingredients. All yellow and red kernel maize hybrids investigated in this study showed good
quality parameters regarding physical properties and variations in chemical composition which
makes them suitable for different industrial uses, primarily for food and feed production.
AB  - Fizičke karakteristike, struktura zrna i hemijski sastav pet hibrida kukuruza žutog i pet crvenog zrna, bili su predmet ovog istraživanja. Masa 1000 zrna, važan fizički pokazatelj kvaliteta
zrna, kretala se u rasponu od 325,76±7,47 g (ZP 555 crveni) do 375,63±4,18 g (ZP 606). Sadržaj
tvrde frakcije endosperma bio je od 57,66±0,93% (ZP 4007) do 67,08±0,42% (ZP 366 crveni), a
meke od 32,92 ± 0,43% (ZP 366 crveni) do 42,34 ± 0,93% (ZP 4007). Skrob, kao najzastupljenija hemijska komponenta, varirao je od 66,80±0,18 (ZP 4007 crveni) do 72,96±0,37 (ZP 606).
Najviši udeo proteina određen je u zrnu hibrida ZP 606 (10,72±0,11%), a najniži u ZP 7007
(8,63 ± 0,04%). Otpornost na mlevenje bila je u visokoj pozitivnoj korelaciji sa udelom tvrdog
endosperma (0.81**), a sadržaj skroba sa hektolitarskom masom (0,77**). Integralna kukuruzna
brašna, dobijena mlevenjem celog zrna žutih i crvenih hibrida, su prirodno bezglutenska i mogu
se koristiti kao sastojci funkcionalne hrane. Svi hibridi kukuruza žutog i crvenog zrna ispitivani u
ovom istraživanju pokazali su dobre parametre kvaliteta u pogledu fizičkih svojstava i varijacija u
hemijskom sastavu što ih čini pogodnim za različite industrijske namene, prvenstveno za proizvodnju hrane za ljude i životinje.

66.80±0.18 (ZP 4007 red) to 72.96±0.37 (ZP 606). The highest protein content was detected in
ZP 606 (10.72±0.11) and the lowest in ZP 7007 red hybrid (8.63±0.04%). Milling response was
highly influenced by hard endosperm fraction content (0.81**), and starch content was strongly
correlated to 1000-kernel weight (0.77**). Whole-grain maize flours produced from yellow and
red kernels without removing the germ are naturally gluten-free and can be used as functional
food ingredients. All yellow and red kernel maize hybrids investigated in this study showed good
quality parameters regarding physical properties and variations in chemical composition which
makes them suitable for different industrial uses, primarily for food and feed production., Fizičke karakteristike, struktura zrna i hemijski sastav pet hibrida kukuruza žutog i pet crvenog zrna, bili su predmet ovog istraživanja. Masa 1000 zrna, važan fizički pokazatelj kvaliteta
zrna, kretala se u rasponu od 325,76±7,47 g (ZP 555 crveni) do 375,63±4,18 g (ZP 606). Sadržaj
tvrde frakcije endosperma bio je od 57,66±0,93% (ZP 4007) do 67,08±0,42% (ZP 366 crveni), a
meke od 32,92 ± 0,43% (ZP 366 crveni) do 42,34 ± 0,93% (ZP 4007). Skrob, kao najzastupljenija hemijska komponenta, varirao je od 66,80±0,18 (ZP 4007 crveni) do 72,96±0,37 (ZP 606).
Najviši udeo proteina određen je u zrnu hibrida ZP 606 (10,72±0,11%), a najniži u ZP 7007
(8,63 ± 0,04%). Otpornost na mlevenje bila je u visokoj pozitivnoj korelaciji sa udelom tvrdog
endosperma (0.81**), a sadržaj skroba sa hektolitarskom masom (0,77**). Integralna kukuruzna
brašna, dobijena mlevenjem celog zrna žutih i crvenih hibrida, su prirodno bezglutenska i mogu
se koristiti kao sastojci funkcionalne hrane. Svi hibridi kukuruza žutog i crvenog zrna ispitivani u
ovom istraživanju pokazali su dobre parametre kvaliteta u pogledu fizičkih svojstava i varijacija u
hemijskom sastavu što ih čini pogodnim za različite industrijske namene, prvenstveno za proizvodnju hrane za ljude i životinje.",

AB  - In this paper agronomic characteristics of quality protein maize (QPM) hybrids adapted to temperate
regions created in Maize Research Institut Zemun Polje are presented. Hybrid ZPQPM13 showed
favorable traits for growing in these regions, and its grain yield was at the level of one of the leading
ZP hybrids - ZP 606. However, grain moisture of this hybrid was 3% higher than that of ZP 606,
pointing out to the tropical origin of its parental inbred lines. Namely, mother was obtained from F1
cross between tropical and adapted lines, and father by marker assisted selection (MAS) from QPM
line of tropical origin that was crossed and twice backcrossed with a commercial ZP line. In the future,
in order to obtain even more adapted QPM hybrids, MAS program will continue with all the best
commercial ZP inbred lines of all FAO groups.

AB  - The  contemporary  trends  in  maize  breeding  are  directed  at  identification  of  genotypes  with improved grain quality for human consumption, industrial processing, and their incorporation into breeding  programmes.  In  this  study,  three  maize  hybrids  and  three  open-pollinated  varieties  (OPVs),  differing in grain colour and type, were used to examine the differences in the total carotenoid content, the phenolic compounds profile and total antioxidant capacity (TAC). In addition, physical parameters, basic  chemical  composition,  as  well  as  the  content  of  protein  fractions  in  grain,  were  analysed.  The  multivariate  approach  through  Principal  Component  Analysis  (PCA)  application  contributed  to  better  understanding  of  the  complexity  of  the  interdependence  for  maize  grain  quality  parameters  tested.  From  the  aspect  of  different  end  use,  better  technological  quality  desirable  for  dry  milling  and  snack  food processing found in OPVs Osmak and Bosanac, as well as high content of bioactive compounds (i.e. TAC) exhibited by OPV Rumenka, make these genotypes superior compared to hybrids’ varieties evaluated.
AB  - Savremeni trendovi u oplemenjivanju kukuruza idu u pravcu identifikacije genotipova povećanog kvaliteta zrna za ljudsku upotrebu, industrijsku preradu i njihovog uključivanja u komercijalne oplemenjivačke programe. Za ovo istraživanje odabrane su tri hibridne i tri slobodnooprašujuće sorte kukuruza različite po boji i tipu zrna, u cilju ispitivanja razlika u sadržaju ukupnih karotenoida, fenolnih jedinjenja i ukupnom antioksidativnom kapacitetu. Dodatno su analizirane fizičke karakteristike i osnovni hemijski sastav zrna, kao i sadržaj proteinskih frakcija. Multivarijacioni pristup, kroz primenu analize glavnih komponenata (PCA) doprineo je boljem razumevanju složenih veza ispitivanih parametara kvaliteta. Sa aspekta različite upotrebne vrednosti, bolji tehnološki kvalitet poželjan za proces suvog mlevenja i proces proizvodnje grickalica (snek proizvoda) je identifikovan kod slobodnooprašujućih sorti Osmak i Bosanac, dok se sorta Rumenka odlikovala visokim sadržajem bioaktivnih jedinjenja (tj. visokim antioksidativnim kapacitetom). Dobijeni rezultati ukazuju na superiornost slobodnooprašujućih sorti u poređenju sa hibridnim.
